Grilled Porcini with Vincotto


Vincotto means “cooked wine” and it is the cooked must of wine grapes also known as “motto cotto.” Its consistency falls somewhere between that of an aged balsamic vinegar and a syrup. The must is boiled and reduced to about 1/2 of its original volume. It may be aged in oak barrels to develop more complexity. The result is a rich smooth, syrupy liquid that can be enjoyed with both sweet and savoury foods. Vincotto can elevate the flavour of so many dishes. It tastes absolutely wonderful with grilled porcini. Try it for yourself and surprise your guests with this delectable treat.

  1. 1/4 cup plus 2 tbsp olive oil
  2. 2 garlic cloves, thinly sliced
  3. 1/4 cup fresh parsley
  4. 6 large porcini mushrooms (brushed clean and cut length wise in half)
  5. Salt and pepper
  6. Vincotto


  1. Prepare grill
  2. In a small bowl combine oil, garlic and parsley
  3. Brush both sides of mushroom with oil
  4. Place on grill and cook for ten minutes
  5. Flip and brush periodically
  6. Arrange mushrooms on plate
  7. Drizzle with vincotto and season to taste
